Ingredients

  • 3 3 eggeggs
  • 1 oz. 28 g butter, for frying
  • 1 oz. (4 tbsp) 28 g (60 ml) cheddar cheese
  • ¼ (1 oz.) ¼ (28 g) yellow onion, choppedyellow onions, chopped
  • 4 4 large mushrooms, sliced
  • salt and pepper

Making low carb simple

Instructions

  1. Crack the eggs into a mixing bowl with a pinch of salt and pepper. Whisk the eggs with a fork until smooth and frothy.

  2. Melt the butter in a frying pan over medium heat. Add the mushrooms and onion to the pan, stirring until tender, and then pour in the egg mixture, surrounding the veggies.

  3. When the omelet begins to cook and firm up but still has a little liquid egg on top, sprinkle cheese over the egg.

  4. Using a spatula, carefully ease the edges of the omelet away from the pan and then fold it over in half. When it starts to turn golden underneath, remove the pan from the heat and slide the omelet onto a plate.

Tip!

Serve the omelet with a crunchy, green salad with vinaigrette dressing on the side. Yum!

    I'm trying to figure how to convert the percentages to grams since I was suggested to have at least 94 grams of protein because of my height which is 5'4 and 20 grams or less on carbs. I used the converter. i.e. - 2 percent equals 20 grams but your recipe said 2g. I wanted to know how did you get that number? 23 percent in protein equals 230 grams. it is too much than 94. Help me here please!!

    Hi Laureen!

    One serving is 2 g carbs (equal 2% of the total Energy)
    Protein content is 23% of the total Energy

    That means the protein content is 23% / 2% * 2g = 23 g protein per serving

    I agree that it would be a lot easier if the recipe simply listed the grams of fat, carbs, protein, etc. I didn't find the protein details hiding behind the icon, until I read Laureen's comment and went back looking for it.

    I have the hardest time making omelettes, even on a low heat they either burn or just won't cook, there's nothing quite as nasty as an undercooked omelet! I assume others have a higher success rate than I. ..any tips?

    Don't cook omelettes on a low heat. The trick is to heat your pan with a little oil or butter until quite hot, then pour your eggs in quickly and slip it all over your pan. The hot oil will seal your eggs and stop them sticking. Add your filling after your eggs have sealed.

    Is the mushroom cooked enough to eat? As per recipe, it seems that mushroom is wrapped inside the omelette, and is not cooked directly at all. Moreover, it would taste raw, I am guessing.

    I cooked the onion and mushroom in the butter first then added it to the omelette with the cheese. There was still enough butter in the pan for the omelette and it was delicious.

    I have some doubts about this recipe... Onions and mushrooms take more to get the heat. If you add them on top when we're told, we get them under-cooked, far from what we see in that picture. Or we cook the eggs too much. Also, I used to add the cheese to the eggs mix, because the whole stuff will be more fluffy.

    This being said, I continue to follow this diet with the amazing recipes from this site. But I'm a bit disappointed: Gordon Ramsey said first proof you know to cook is to show how to make a good omelet. The picture above was amazing, but the instructions were wrong.

    omelette personally was awful as not only was it swimming in way too much fat but the fact that the mushrooms and onions are put in right at the end leaves them raw. Better off cooking veggies before as you would in a normal omelette and cutting down on the butter.

    I cooked the onion first in a non-stick pan, then melted ghee and poured the mixture, then added mushrooms. Turned out good, though I don't know how you got that brown sauce in the picture.

    I agree with you. I think the onions and mushrooms need to be cooked before, probably for about 5 minutes on a medium-high heat, then added to the omelette afterward. No one wants raw mushrooms or onions in their omelette.

    Most people on keto find they have the most success at about 5% carbs, 20-25% protein and 70-75% fats.

    Just had this for breakfast and it's yummy! I sliced up a spring onion instead of the 1/4 yellow onion and 125g sliced chestnut mushrooms and it worked perfectly. I'm comfortably stuffed now! :)

    You can use fewer eggs if you don't want 3. Most of our recipes can easily be tailored to suit your needs.

    Counting carbohydrates is the most important thing and for most is sufficient (20 net carbs a day for keto). Beyond that, you need to have adequate protein and eat fat for flavor and satiety.
