You'd be surprised how just a handful of ingredients can make something so incrediblyrich and chocolatey!

So, here's what you'll need:

Like I've said, there's really not much to it!

However, since we're only using a few ingredients, you'll want to make each ingredient count.

For example, be sure toget salted butter instead of unsalted butter. The salt in the salted butter willcomplement the sweetnessof the fudge andadd a lot of depthto the chocolate flavor.

And if you want to kick it up a couple of notches,sprinkle some coarse sea saltto amp up that flavor combination while adding a bit of texture to the final product.

KETO FRIENDLY CHOCOLATE CHIPS TO USE & AVOID

Now, if you've been following my blog you probably know that my go-to low carb chocolate chips for keto areLily's Semi Sweetened Chocolate Chips.

And honestly, the first time I tried these, I had a hard time believing they have 0 NET CARBS because they are just so GOOD.

I use them in most, if not all, of my keto recipes with chocolate chips - like this Keto Mason Jar Mint Chocolate Chip Ice Creamand myKeto Peanut Butter Chocolate Chip Cookies.

That being said, if you can't findLily's Chocolate Chips, another good keto option for chocolate chips are the ones fromChocZero.

What Idon't recommend using, however, is the Hershey's "Sugar Free" Chocolate Chips. Though they have "sugar-free" in the name, they actually contain maltitolwhich isa sugar alcohol that is not keto-friendly.

Each serving of the Hershey's sugar free chocolate chips has over 4g of carbsper serving, which is obviously not ideal if you're on a low carb diet.

KETO FRIENDLY SWEETENERS TO USE & AVOID

As always, I recommend usingConfectioners Swervetosweetenup this recipewithout adding any carbs.

But, another good1:1 sugar substitute for ketoisLakanto's Monk Fruit Sweetener. It's naturally-derived and, likeConfectioners Swerve, has0 net carbs.

More importantly, you can use Lakanto's Monk Fruit interchangeably with Swerve. So, if that's what you have on hand, go ahead and use it!

Just make sure youdon't use the Lakanto's Sweetener that'stwice as sweet as sugar.If you use this version of their sweetener your keto chocolate fudge will be too sweet.

For my European readers, you can use eitherSukrinorregular erythritol.

The rule of thumb for these keto sweeteners is touse a little bit morethan the required amount ofSwervesince theyaren't as sweet.

Avoid Using Stevia

I know this may come as a surprise to some of you, but you'll want toavoid using Stevia as a keto sweetener.

I've talked about this a few times before but, if you're new to the blog: Stevia in its purest form is a whopping300 times sweeterthanSwerveand regular sugar.

Also, a lot of Stevia products on the market are mixedwith maltodextrin and dextrosea.k.a.loaded with carbs and sugar.

With all that said, I recommend staying away from it.

HOW TO MAKE KETO FUDGE

As I've mentioned, this super easy keto fudge recipe doesn't require any bakingAT ALL.

If you have amicrowaveand arefrigerator, you're all set!

This fudge recipe also keeps really well (more on that later), so you can make these ahead of timeandalways have rich chocolatey fudge on handfor gifting, snacking, or dessert.

Now let's get into the details!

STEP 1: PREP

So the first thing you'll need to do ismelt your salted butter and sugar free chocolate chips. To do that,chop up the salted butterinto smaller pieces and place it in amicrowave-safe bowlwith thechocolate chips.

Pop that in the microwave andheat in 30 second increments,stirringthe butter andchocolate chipstogether after every 30 secondsuntil well-combined and completely melted.

STEP 2: COMBINE INGREDIENTS

Now that the butter andchocolate chipsmixture is ready,use a sieve to siftyourConfectioners Swerveand cocoa powder into the bowl.

Thishelps prevent clumpsofSwerveor cocoa powder from getting into the batter and making it lumpy.

Mixeverything together with a rubber spatula until everything has been thoroughly incorporated.

STEP 3: POUR AND REFRIGERATE

Pour somewaterinto yourbread panand line it withparchment paper. You'll want to make sure you have someexcess parchment paper hanging over the sidesto make it easier to pull your keto fudge out of the tray.

Then, gentlypour your chocolate mixture into the pan. To get it nice and even, you can smoothen it with a spatula or gently tap the pan on the table a few times to distribute the batter.

Refrigerateit forat least 1 hourto let the chocolate fudge set. However, if you're impatient, you can always freeze it and save yourself some time.

STEP 4: SLICE AND SERVE

Once your keto chocolate fudge has fully set, you can take it out from the pan,slice it into 21 squares, and dig in!

STORING KETO FUDGE
