33 Spring Asparagus Recipes (1)

Spring is my favorite season primarily for one reason: The asparagus.

33 Spring Asparagus Recipes (2)

Well yeah, the nice weather and temperatures above70º are much appreciated too, especially after the looooong, cold winter we had this year. The temperatures actually climbed above 80º last Saturday! Yep, I totally pulled my flip-flops out and walked around in shorts all day.

And then….the weather turned. So typical of Wisconsin right? Ugh. It is soo cold here today and I don’t really appreciate that, just so you know. At least it’s sunny. — I can’t stand cold AND cloudy days.

Let’s get back to asparagus though, shall we? I love asparagus, absolutely LOVE it and I must admit that I cook with it so much this time of year, my family actually has to beg me to stop. — I get back at them by having them do the dishes. Ha! I’vefound cleaning servicesto be a fitting payment. 😉

You’re going to LOVE all these delicious and just plain FUN asparagus recipes I rounded up from all my favorite blogs.

It’s 8pm right now and I am craving a plateful of asparagus RIGHT THIS SECOND.

Why you shouldn't cut the ends off asparagus? ›

It is not necessary to trim asparagus. On some spears, especially fresh, pencil-thin stalks, the woody ends may tenderize once cooked. But on larger stalks, the ends of the asparagus are often woody and dense—Which makes them difficult to chew, no matter how soft the asparagus is after cooking.

How many stalks of asparagus should you eat? ›

What part of the body is asparagus good for? ›

The dietary fiber in asparagus helps your stomach and intestines continue to work normally. Dietary fiber fuels good bacteria, which help your body digest food and absorb important nutrients. Eating enough fiber also helps prevent problems like hemorrhoids, irritable bowel syndrome, or other painful digestive problems.

How do I know when asparagus is done? ›

Cover and cook, shaking occasionally, until bright green but still crisp, about 3 minutes. Uncover and continue cooking until the asparagus is tender when pierced with the tip of a knife, 5–10 minutes more (the thicker the spears, the longer the cook time).

Why is my asparagus tough after cooking? ›

Asparagus contains an enzyme that creates a woody compound called "lignin," at the end of each spear. Lignin is not softened by heat, so it remains fibrous and tough after cooking. To eliminate lignin, snap (don't cut) the end of each spear just before cooking.
